Ingredients

 1 دجاجة مقطعة ارباع
 2 كاستين فريكة
 كركم
 ملح
 فلفل اسود

 olive oil
 dry za’atar
 2 lemons

Cut whole chicken in quarters and clean each quarter with water flour lemon and salt then rinse again and dry

Toss cleaned chickens in a bowl and marinate it with salt black pepper, olive oil, lemon juice, dry za’atar, salt beit sitti stock mix and and mixed spice. Leave to marinate overnight or a couple of hours ahead of time

line the chicken in the tray, add an roughly chopped onion bay leaves and a bit of water then cover the chickens with a foil paper

Place the tray in an oven at 200c for around 45 minutes then bring to a broil for around 10 minutes

clean the freekeh of any stones then rinse the Freekeh several times

Leave the Freekeh in water to moisten for about 30 minutes

in a pot olive oil followed by adding the Freekeh into the pot and spice it with 1tspn salt 1teaspoon black pepper and 1tspn Turmeric powder

cover with water to the top and bring to a boil for 5 minutes then let simmer for 20minutes

From time to time stir the Freakeh until its moist but there is no water left

Once the Freekeh is done place it in a dish

Take the chicken out of the oven and place it on top of the Freekeh, don't forget to use the extra juice that came out of the chicken to give it flavor

roast pine nuts and almonds in olive oil to dress your freekeh
