Arabic Bread And Manaeesh

Ingredients

 Dough
 1 ½ kg flour
 2 tsp yeast
 1 tsp sugar
 ½ cup warm water
 1 tsp salt
 1 cup yoghurt
 ½ cup olive oil
 Zaatar
 White Cheese
Filling
Your choice of Zaatar and Zeit
White Cheese (Akkawi)

Directions

1

Mix water, yeast and sugar into a cup together, leave in a warm place for 10 minutes and wait for the yeast to rise

Pass the flour through a sieve

Add salt onto the flour

Pour the yeast mixture on top of the flour and mix with your hands

Add the yoghurt to the mixture and massage the dough

Follow by adding the olive oil gradually and then mix together to get the right texture of the dough. (Add more water if needed)

Cover the dough with a piece of cloth and let it sit for 30 minutes

Take a pice of dough and form it into a circle then press it with a rolling pin

9

For zaatar topping
Mix the Zaatar with Oil and spread on the dough

For Cheese topping
cut the white cheese into very small pieces and and spread on top of the dough. (if you don’t like salty cheese soak the cheeses in warm water for 15 minutes and keep rinsing until the cheese is less salty)

Place the maneesh into a 350c oven for 20-25minutes until the tip is golden brown
