Ingredients

 2 pita bread cut into 1inch squares
 2 medium sized eggplant
 2 cloves garlic
 1 tsp salt
 ½ tsp black pepper
 1 tbsp pomegranate molasses
 5 tomatoes
 4 tbsp tomato paste
 ¾ cup olive oil
 parsley
 Pine nuts

Directions

Cut up pita bread into small 1 inch pieces and fry them in corn oil for 1-2 minutes until golden brown.

Peel the eggplant, chop it into cubes then sprinkle it with salt.

Wait for the water to seep out of the egg plants then start deep frying it until golden brown.

Mix yoghurt, garlic and salt.

Sauté onions and garlic until transparent followed by 5 peeled and finely chopped tomatoes, add tomatoe paste then add water , sprinkle pomegranate molasis then let reduce.

Add fried eggplant cubes into the tomatoe mixture and let simmer.

In a nice plate start by layering the pita bread, follow by adding the tomato and eggplant mixture, and then top it off with the garlic yoghurt.

Dress the fatteh with parsley and fried almonds on top. Enjoy!
