Ouzi Surar

Yields1 Serving
 ½ kg boneless Lamb cubes
 ¼ kg ground veal or lamb
 1 bag of peas and carrots 
 1 cup basmati rice
 ½ cup Ghee
 2 tsp salt
 1 tsp black pepper
 1 tsp beit sitti stock mix
 2 tsp Allspice
 1 tsp cinnamon 
 1 tsp ground cardamom 
 ½ tsp cloves
 1 onion
 2 bay leaves
 1 pack filo dough (12 pieces)
 1 egg
 1 tsp vinegar
1

boil the meat for around 1 hour in a pot along with 1 bay leaf in it along with an onion and cloves, and cardamom and skim the foam like froth that rises to the top.

wash the rice well, around three times until water is clear, then get rid of the extra water

chop an onion finely and sauté with ground veal in ghee.

add the peas and carrots and mixed spice, cinnamon, cardamom, salt and pepper to the mix together followed by rice.

add the cubed meat and mix together, follow by adding the stock

lower the heat and leave the pot for another 20 minutes until the rice scooped all the way through.

Once the Ouzi is prepared place it in a dish and add roasted almonds and pine nuts.

in a small bowl layer the piece of filo dough then stuff with the stuffing and close from the bottom then line on a baking tray

mix and egg with a little bit of vinegar and water to brush on top of the ouzi surar

bake in the oven and enjoy with a side of yoghurt and cucumber salad
