In a mixing bowl, combine the semolina, shredded coconut, sugar, baking powder, and vanilla extract. Mix well until all the dry ingredients are evenly combined.
Add the yogurt to the dry ingredients and mix well. Slowly add a little bit of water at a time until the mixture forms a thick paste-like texture.
Preheat your oven to 350°F (175°C) and spread some tahini on a baking tray to act as a protective coat.
Pour the mixture onto the baking tray and use a spatula to spread it out evenly.
Place the tray in the fridge and let it rest for 20 minutes.
After 20 minutes, take the tray out of the fridge and cut the basbousa into square or diamond-shaped pieces.
Bake the basbousa in the oven on low heat for 10-15 minutes.
After 10-15 minutes, switch the oven to broil and bake for an additional 2-3 minutes or until the top turns golden brown.
Remove the basbousa from the oven and allow it to cool for a few minutes.
Top the basbousa with almonds and drizzle cold simple syrup on top for added sweetness.
Let it cool for a few minutes and serve.
