A Yemini dish cooked underground, this is a nice trick to learn to smoke rice at home


1. Cut a whole chicken in quarters and clean each quarter with salt, lemon, flour vinegar rub and then rinse with water.

2. Marinate chicken with black pepper, turmeric, lemon juice ,olive oil, 1tspn salt, 1tbspn tomato paste

3. Spread oil on an oven tray and line the marinated chicken. Add 1 onion quartered and 4 clove of garlic 2 bay leafs and 2whole cardamom pieces and add a little bit of water and cover with foil

4. Place the tray in an oven at 250c for around 45minutes.

6. Wash long grain rice well, around three times and let soak in cold water for around 20minutes

7. finely chop onion, garlic

8. Pour a little bit of vegetable oil at the bottom of a large pot and sauté the finely chopped onion and garlic until translucent then add the spices (1 tspns of turmeric, 1 tspbn ginger, cardamom, dried lemon, mixed spice, beit sitti stock mix, 1/2 tspn cloves) and then tomato paste

9. Follow by adding 2cups water and bring to a boil

10. Add the rice into the pot, and leave for 3minutes on high heat, then lower the heat and let it simmer until rice is almost cooked

11. Fill up half a small cup with vegetable oil and place it in the center of the rice. Add a hot coal inside it, put it in the pot and close the lid to give it the smoky taste

12. Broil the chicken in the oven so that it is nicely roasted from the top

13. Leave for another 5 minutes until the meal is cooked and ready

14. Once the Mandi is done place it in a dish

15. Take the chicken out of the oven and place it on top of the Mandi rice then dress with fried pine nuts, almonds and raisins ,

Mandi Sauce


1. peel the ripe tomatoes and grind them
2. mash the garlic cloves and add them to the tomatoes
3. follow by adding the lemon juice and salt
4. mix together and you are ready for your Mandi with your sauce

  1. 1 whole chicken cut up to 4 pieces

  5. 2 Tbspns tomato paste

  9. 1tspn allspice
  10. 1 1⁄2 tbspn salt(1 for meal 1⁄2 for dressing)
  11. 2cups water
  12. bay leafs
  13. olive oil
  14. charcoal

Mandi Sauce

  1. 2 ripe tomatoes
  2. 2 cloves garlic
  3. 3tbspn lemon juice
  4. 1⁄2 tspn salt
